Read the instructions from Apple up top on how to set up Back Tap — so easy even a TechnoDolt©®™ can do it (and did!)
Full disclosure: my Double Tap takes a screenshot and Triple Tap turns on the flashlight (another Triple Tap turns it off).
I figured I'd be more apt to accidentally turn on the flashlight with a Double Tap than Triple, hence my choices.
There are a zillion different actions you can link to these gestures to make life just that wee bit easier and more fun.
